Here's a great recipe for taco night that couldn't be easier (or more delicious). I like to clean and prep all my condiments prior to cooking my taco meat and set them aside in the fridge or on the table. This way once the taco filling has finished cooking, everyone can sit down and assemble their tacos while the meat is still hot.
INGREDIENTS
1 lb. ground beef
1 small yellow onion, diced
2 tbsp. jalapenos (from a jar), minced
2 tsp. Worcestershire sauce
2 tbsp. T-Rev's Stiff Willi Chili Spice Mix
Kosher salt to taste
For assembly:
8-10 taco shells
2 cups iceberg lettuce, shredded
2 cups sharp cheddar cheese, shredded
1 tomato, diced
1-2 cups sour cream
Taco sauce to taste
DIRECTIONS
Preheat oven and heat taco shells according to directions on box.
Cook onion in large skillet with 1-2 tablespoons vegetable oil and a pinch of salt on low heat until soft. Turn heat to medium high, add ground beef, add a couple pinches of salt, and cook until brown. Add the rest of the ingredients and toss to combine.
Transfer taco filling to serving bowl and assemble tacos to your liking. I don't have any pictures of the cooking process, but I did manage to take this one as my son was devouring his taco. And parents, if your small children will eat the food you cook for the rest of the family, you know you've got a winner!
